Super Simple Roasted Cauliflower
Cauliflower is such a versatile veggie that can be a side or integrated into main dishes! According to the United States Department of Agriculture, one cup of cauliflower contains only ~27 calories, 2 grams of protein, and 2 grams of dietary fiber and is a rich source of vitamins and minerals including Vitamin C (85% of the daily recommended value!), Vitamin B6 (10% DV), and potassium (9% DV), as well as others!
Cauliflower offers a good amount of fiber per serving which can help reduce the risk of heart disease. The Vitamin C in cauliflower is an antioxidant which can help prevent inflammation and chronic disease.
Cauliflower does come in a variety of colors which offer additional vitamins and minerals; yellow and orange cauliflower have more beta-carotene (antioxidant) in them and purple cauliflower has more anthocyanin (antioxidant).
Cauliflower can be prepared in a variety of ways, from steaming, to grilling, to pureeing, to roasting.
This recipe is for SUPER simple roasted cauliflower. The flavor reminds me of really tasty breadcrumbs (but with the added vitamins and minerals of cauliflower)!
Super simple roasted cauliflower
Ingredients
1 large head of cauliflower, divide into florets
2 tbsp olive oil
2 tsp garlic salt
1.5 tsp freshly cracked pepper
Instructions
•Preheat the oven to 400F. Prepare your baking sheet by spraying with nonstick spray.
•In a large bowl, toss cauliflower with olive oil. Spread it out evenly over the prepared baking sheet.
•Sprinkle garlic salt and pepper over the cauliflower.
•Bake for 25-30 minutes, until softened and lightly golden.
